Since 1926 Rocky Ridge maple products have been made from 100% pure organic sap,
collected from our own maple trees. Using only sap from our own maple trees
allows us to control the quality and costs of our maple syrup products. We cook
our sap on two large wood-fired evaporators. Using wood from our own forests
helps us control costs and reduce dependence on foreign oil sources. Our syrup
is bottled and sealed at 190 degrees and will keep for long periods of time
until the container is opened. Because it is organic syrup and contains NO
PRESERVATIVES, after opening the syrup must be kept in the refrigerator. The
Maple Syrup industry divides syrup into grades based upon color and flavor. In
Wisconsin these grades are Light Amber, Medium Amber, Dark Amber, and
Commercial. At Rocky Ridge, we combine these grades to provide you with three
flavors; Rocky Ridge Gold, Frontier Style, and Rustic Dark.
-
Rocky Ridge Gold is a
light to medium amber colored syrup that is made
from sap gathered earlier in the season. We call it Gold because this syrup
has a golden color when you hold it up to the light. Many people prefer this milder flavored
maple syrup for use on Ice Cream, Waffles, or for making maple candies.
-
Frontier Style
is made in the last half of the sap
season and com bines the Medium and Dark Amber grades to provide a
great taste for those who prefer a stronger maple flavor. Starting with the
Native Americans, maple syrup and maple sugar have played important roles in providing
sweeteners for people living in the American frontier. Being cooked in pots
and kettles often caused this early American syrup to be darker and have a
strong maple flavor. Our Frontier brand's flavor
commemorates the rugged individualist life style of the early Americans.
-
Rustic Dark also know as our
Rendezvous Brand is a commercial grade of syrup that is made late in the
season and is available only in quarts.
This syrup is a dark,
stronger flavored syrup that is made from sap collected just prior
to the buds forming. Some people claim that this syrup is more nutritious
and use it as part of special diets. It is definitely great for flavoring
foods and making your own pancake syrup. A little bit of this syrup goes a
long way. Many Native Americans actually preferred this flavor to
using salt in flavoring their foods and meats.
